Hi all! So sorry I disappeared yesterday. It ended up being such a hectic day, and I was exhausted so I was in bed and asleep by 10! Crazy I know. I came home from working out on Thursday pathetically tired and so hungry. After taking a shower and about an hour of pacing back and forth from our empty fridge to the pantry with nothing but a box of quinoa and ready-made lentils as a dinner option (neither of which sounded good at the time), I came to the conclusion that I had to go to the store for groceries. I’ve been so tired all week I’d been avoiding buying groceries (and look at where that got me). Let this be a lesson to all you fellow grocery store avoiders, when the time comes you’ll be glad you foraged the battle ground that is H.E.B (or your preferred shopping location) whenever those hanger (hunger + anger) pains strike. I lost this empty fridge battle, but I will win the war. Okay dork-fest over!
I was feeling something warm and comforting for dinner so I settled on making a lower fat version of the Zuppa Toscana soup at Olive Garden (my fav). It has Kale, and Kale is healthy right? I followed this recipe, but only added a few tablespoons of cream to keep the fat content lower (it calls for a cup! Yikes!), and if you wanted to go even further you could season ground Turkey with Italian sausage seasoning and cut way more fat out that way. It was a hit! I also subbed red potatoes instead of russet because for some reason I just feel like they’r healthier. I have no scientific evidence to back this up, I’m just going with my gut and my gut was happy. I know I was eating past my 7Pm curfew but I didn’t care. It had been a long hard day and all I wanted out of life was a bowl of soup, and soup I had. Life happens.

Thursday’s workout was INTENSE to say the least. I did Clings and Lunges as my strength exercise. Then I did 5 rounds: 60 Rope Slams, 10 Overhead Plates, and 1 Prowler. Only this time I had to run with my Prowler. I didn’t run all of them but I ran what I could, and oh my God I thought I was dying and simultaneously I was so happy. I ran a prowler. 5 months ago I could hardly walk up the gym steps without getting winded and now I can do that. Progress. Friday
Today was another busy day. I didn’t have too much time for pictures and I basically ate the same things. I’m on a soup kick so I had left over soup from Thursday for lunch and Beef Caldo for dinner. I consistently drank about 90 oz of water each day give or take a few ounces. I did prep a crustless quiche that I’ve been trying to make all week. It’s chock-full of kale, broccoli, turkey bacon, garlic, and cheddar cheese (it’s in the oven as I type and it smells so good). I’ll let you know how it turns out.
