I’m back! After a relaxed weekend I’m at it again. Last week was a very successful week and I’m working hard to keep the momentum going into this week. I lost a total of 3.3 Lbs last week!! If I continue on this path I will have lost a total of 30 lbs since starting my weight loss journey by the end of my 4 week challenge! A milestone for sure.

Last post I talked about the crustless quiche that I was making, oh my gosh y’all this quiche was AMAZING. Because it made so much I basically ate eggs and veggies all weekend, but it was so good I didn’t care. The whole fam loved it and I’ll be adding it to my weekly arsenal of recipes. I was going to write out a cute little digital recipe card for you guys but I failed to measure a single ingredient and just threw it together (that’s how I roll in the kitchen haha). So if you are interested in making this quiche it’s pretty simple, the ingredients are as follows:
- Fresh Broccoli florets
- fresh chopped Kale
- White Onions (chopped)
- Fresh garlic (chopped)
- Turkey Bacon
- Eggs
- Almond Milk or Soy Milk
- Shredded 3 Cheddar cheese mix 8oz
- Coconut Oil

I lined a 9×13 baking dish with parchment paper, and pre-heated the oven to 350. I purchased a large bag of fresh broccoli florets from H.E.B and made an entire layer of broccoli on the bottom of my dish with them, I wanted this thing packed full of green goodness.
In a small pan I sautéed the chopped onions, garlic, and turkey bacon in a little bit of coconut oil until the turkey bacon was cooked, and the onions were soft and fragrant.
Now back to my baking dish, I added a light layer of cheese over the broccoli, then added handfuls of kale to the dish, then another lighter layer of broccoli filling in any holes. Then on came the bacon mix, and more cheese.
In a large mixing bowl I beat about 15 eggs (give or take a few, again I don’t measure I eyeball everything), about 1/2 cup of almond milk, and seasoned with salt & pepper to taste. Then I drizzled the egg mixture over my layers of veggies until it was nice and covered in glorious eggs (mixing and stirring a bit when necessary) and topped it off with more cheese for the final touch. Pop that baby into the oven for about 45-50 mins, and you’ve got yourself a delicious protein packed breakfast (or lunch, or dinner).

That’s pretty much all I did all weekend, besides a visit from my sweet in-laws and a trip to Target, I stayed home and ate quiche (exciting I know haha).
Monday
Monday’s are always busy and this Monday especially busy. Tomorrow is my oldest brother’s 21st birthday and Michael’s 25th birthday, two big birthdays in one. We are going to San Antonio for dinner and maybe a late night walk down the River Walk for CJ’s (my brother) first bar experience. Old Alexis would totally take advantage of all the free birthday drinks he’ll be entitled too, but new Alexis is going to sip (slowly) on her one drink of the night (can’t drink my calories, who have I become?). Since we will be in San Antonio tomorrow and I normally work-out on Tuesdays I went today instead, and I’ve got to say even though I’m normally exhausted Monday evenings I really enjoyed a Monday night workout. It just might have to become a thing soon.
For breakfast this morning I had a kind bar and my H9 water because I was in a rush (as usual). For lunch I had yummy leftovers of the roasted veggie mix with chicken sausage that I made over the weekend that I posted to Instagram (so freakin good, I never though I would love vegetables that much) and a side of brown rice. Dinner was a special pre-birthday dinner especially for the birthday boys special made by our grandma (Michael’s “Grandma-in-law” I guess haha) Turkey salisbury steaks, steamed green beans and red potatoes, and a family specialty: cheese grits. One word, YES. No one makes a home cooked family meal like grandma, with a whole lotta love!

Tonight’s WOD:
Usual warm-up and 5 rounds: 60 Rope Slams, 10 push-ups, and 15 Squats. The ropes were killing me today, my arms will thank me tomorrow. I’m still feeling pain in my lower back so again I had to take it easy today. It’s getting rather frustrating so I think a massage is in order soon to see if we can get this muscle thing figured out.
Now I have got to get some rest before our big day tomorrow, I will see you all on Wednesday!
